I went to the Farmer's Market on Saturday morning and brought home a bounty of fresh locally-grown goodies. However, I mistakenly bought a bag of braising greens instead of salad greens so I had to improvise to use it up.
As with many recipes that I post, measurements and even ingredients are all to taste. If you're more health-conscious than I am, drain out the fat after cooking the bacon and use 1 tablespoon of olive oil. I just happen to love using bacon fat to cook which is delicious albeit grossly indulgent.
3 strips of bacon, cut into 1/2" pieces
1 garlic clove, minced2 handfuls of braising greens
1 handful of fresh basil
salt and pepper
1 teaspoon red chili pepper flakes
1 bagel, sliced in half
1 generous dallop (about 2 tablespoons) miso-ginger dressing
In a large pan over medium heat, fry the bacon until cooked (but not super crispy). Add garlic and sautee. Throw in the greens and basil and sautee until greens are wilted, adding in the chili flakes and dressing. Add salt and pepper to taste. Meanwhile, toast the bagel. Slightly drain out the excess oil. Sandwich the mix between the bagel slices.
